Mom’s holiday Jello mold
Every holiday, my mom would make her black cherry jello mold, and for many years, I have made it for Christmas Dinner. I made this for a dinner I had for Chris’ mom and sister yesterday.
Here is the list of ingredients:
- 2 cans of Bing Cherries
- 6 oz black cherry jello
- whipping cream
- 1/4 to 1/2 cup Port wine
Drain the cherries but save the juice. Place the cherries on the bottom of a ring mold.
Heat the juice to a boil, along with enough water to make 3 & 1/2 cups. Dissolve the jello in the hot liquid and then add the Port WIne. Pour into the mold and chill overnight to set firm.
Here is the finished product, with a bowl of whipped cream placed in the middle. My mom used to add a little Miracle Whip to the whipped cream, but I left it out so I could use the left over to top the pie we had for dessert.





Looks yummy! Of course, it has whipped cream. Everything is better with whipped cream.

Elise, you are still “the master” at unmolding. It looks perfect. Another ingredient Mom would put into to the Miracle Whip/whipped cream mixture was a small amount of freshly squeezed orange juice.

The port wine would have been this recipe a favorite of Justin Wilson. I just wonder how much wine would have gone into the Jello and how much would have gone into Justin Wilson.

Cliff- I had to google Justin Wilson. He had a PBS show like Julia Child, but I never heard of him before.

Justin Wilson was “The Cajun Chef” and more of a comedian than cook. His program had some great entertainment value. He did a lot of cooking with wine. He would say “a little wine here” and pour some in the pan, then “a little wine here,” and pour some down his throat.

I watched Julia child with my mom and the galloping gourmet, but I missed out on the cajun chef. I have to see if his video’s made it to utube.
